It’s not much to go on, but this is apparently what iOS in the Car will look like.  The video was published by developer Steven Troughton-Smith.

For full disclosure’s sake, this above footage only depicts the emulated version (on an Apple computer) of iOS in the car – in other words it’s not an actual hands on in an actual car.  Nevertheless, it gives you a feel for how iOS will integrate into vehicles.  Most notable is the absence of  the keyboard.  Instead commands are completed using Siri, aka voice recognition.
